Fresh Fish

Fresh fish are sold as whole fish.

We will *prepare* your fish to your **specifications** at no extra charge, specify your requirement when the fish is added to your basket.

Typical preparations are:

• Scaled, gutted and head removed (removing the scales allows the skin direct contact to the heat source and the the skin will crisp up)
• Trimmed - the fins and tail are trimmed off
• Filleted - fish is taken off the bone

• Skinned

*Some of our fish will only be supplied whole and these are marked on their individual description pages.
